Recipe + Poem – Ginger Pork

Happy July the 4th everyone! It seems like a cloudy day today, but I hope it gets a little bit brighter! How do you guys feel about cloudy summer days? I have a love-hate relationship with it. If it’s raining and cloudy, I absolutely love it. However, when it’s just cloudy, with no speck of the usual blue hues, it feels a bit gloomy. I love the partially clouded sky.

Clouds are so fascinating to watch!

Anyway, I wanted to share a quick 10-minute recipe with you – Ginger Pork (Shogayaki -ish) with Lettuce, Radish, Mandarin, and Scallion. Shogayaki is basically thinly sliced pork chops cooked in a glaze. It is a sweet and salty recipe that can be made under 10 minutes, depending on your pork slices. Unlike the usual method, I marinated the pork with some Ginger, Garlic, and Mirin. I then coated it with some flour and cooked it a glaze made with Sugar, Soy Sauce, and Sake. It made the food a bit more flavorful, and perfect for Day Old Rice!

You guys might be wondering – what is the Day Old Rice. It’s basically rice that has been soaked in excess water overnight and had the next day. For 30 grams of rice, you can use 4 cups of water to yield two cups worth of it. It doesn’t require any heating, and it makes the rice very soggy. It has some fantastic cooling properties, which is excellent during the summer!

Day Old Rice with Pickled Radish, Baby Clams Miso Soup, and Shogayaki!

Recipe

Marinade

  • 150 grams – Thinly Sliced Pork Chops cut into your preferred size pieces
  • 7 Grams – Grated Ginger
  • 7 Grams – Grated Garlic
  • 7 mL – Soy Sauce
  • 7 mL – Mirin
  • 4 mL – Sake

Shogayaki Sauce

  • 12 mL – Soy Sauce
  • 12 mL – Mirin
  • 5 mL – Sake
  • 4 grams – Sugar
  • 2 – Spring Onions (thinly sliced, with the whites and greens separated)

Other Ingredients

  • 5 grams – Flour
  • 10 mL – Sesame Oil (or any Neutral Flavor Oil)

Method

  1. Marinade the pork with the ingredient mentioned for at least 30 minutes
  2. Heat a medium sized pan on medium heat and add some oil to it
  3. As the pan heating up, lightly coat the pork chops with the flour
  4. Place the pork in the heated oil, and sear on both side, about 3 minute on each side
  5. Add the glaze sauce mix, and let the pork cook through, about 1 minute
  6. Garnish with the green parts of the scallion, and serve with some salad and day old rice!
